How We Cure / Cara Pematangan

Every bean undergoes our 4-step traditional curing process developed in partnership with local farmers. The process takes 3–4 months and is critical to developing the characteristic vanilla flavour.

  1. Killing (Échaudage) Beans are briefly immersed in hot water (63°C) to stop vegetative growth and activate enzyme activity.
  2. Sweating Beans are wrapped in blankets overnight to encourage moisture loss and enzymatic conversion of glucovanillin to vanillin.
  3. Slow Drying Beans are sun-dried for 3–4 hours daily over 2–3 months, developing flavour complexity and achieving target moisture.
  4. Conditioning Final 1–2 months in sealed boxes allows flavour to develop fully and equalise throughout the bean.
